Infusing Olive Oil

Piggybacking on Marcus’ olive oil post, I wanted to share some ideas for adding a twist to the olive oils you have at home. Most stores (Whole Foods) sell infused olive oil at inflated prices. All it takes is a little prep and creativity to make your own at home. Cooking with garlic rosemary or jalapeno cilantro olive oil can give your sauteed veggies a completely different taste and give variety to those who complain about a “limited” Paleo selection of foods.
Start by getting some quality local olive oil. Then, select the herbs and spices you want to use. Common ones are rosemary, garlic, basil, bay, chives, chili, lavender, dill, mint, marjoram, tarragon and thyme (I’m going to try jalapeno and cilantro). Wash and slightly bruise the herbs and put in them in a jar. Add warmed olive oil, and tightly seal. Store it in a cool dark place for 1-2 weeks and give it a try. If it’s done, remove the herbs (or leave in, but know that it will get stronger as it sits), and you’re ready to go!
Remember to store in a cool dark place, as you would any olive oil. If you use garlic, however, refrigeration is suggested.
