Recently, my full-time job took me to Ohio for two weeks.  Besides missing Ruth, the biggest thing I was worried about while being on the road was eating properly (i.e. quality foods) since the hotel was equipped only with a small fridge and a microwave.  I was in luck to find a Trader Joe’s just outside of Dayton, Ohio and it was here that I discovered the staple that would carry me through my trip and now serves as my go-to meal in a pinch. 

 

Trader Joe’s Traditional Carnitas is a vacuum sealed, pre-cooked, 12 ounce hunk of pork that can be found in their deli section.  The ingredients include:  Pork (containing water, sodium citrate, salt, sodium phosphate, sodium diacetate), marinated with orange juice concentrate (water, concentrated orange juice), and spices.  Yes, as you can see there are various preservatives used on the pork, but when there’s  lack of time, money, or cooking equipment to eat better quality meals, one must have some good alternatives at the ready.  

Place the entire package into the microwave for 2-3 minutes and the pork is hot and ready to serve.  By itself the carnitas is very tender and flavorful, but my preferred seasonings include a Paleo poorman’s BBQ sauce consisting of mustard, hot sauce, and black pepper.  Eat with some frozen vegetables or a makeshift salad and you’ve got yourself a quick, all-be-it a little dirty, Paleo meal in about 5 minutes.
