A huge congrats to all the competitors from yesterday’s NLP Invitational. An even bigger thanks to all the spectators who put us on the map by their exuberant cheering skills. However, the biggest thanks goes to Alia, who stepped up to volunteer in order for us to compete in this event. She not only had to go to a volunteer meeting this last Wednesday down in the OC, she also beat us all to the event arriving at 4:30am to volunteer! A recap of the event will follow in a later post but until then, this recipe is from Alia’s own blog, Hunt. Gather. WOD! She has some great recipes and food ideas on it, so check it out!
Nummy Bacon Quiche

Ingredients:
1lb thick applewood smoked bacon (Best if from Whole foods or Bristol Farms)
1 cup Baby Spinach (wash well)
I stalk broccoli
2 bell peppers (pick any color you like)
4 cloves of garlic, peeled and diced
6-7 med sized fresh chopped basil leaves
3 omega-3 eggs
garlic powder to taste
pepper to taste
Start with an oversized muffin pan.
Preheat oven to 350

1. Lightly (very lightly) grease bottoms of muffin tin with butter, ghee, or olive oil.
2. Chop broccoli and bell peppers into small but not diced pieces. You can basically fill these cups of glory with anything you would put in an omelet (sans cheese) ham, zucchini, onions, sausage, more bacon, you know; the essentials.
3. Lay a few spinach leaves on the bottom
4. Arrange the bacon around the edge of the pan fatty side up
5. In a bowl combine the chopped veggies and meat, basil leaves, chopped garlic.
6. Toss to evenly mix ingredients.
7. In a smaller bowl beat the eggs, garlic powder and pepper. No salt is needed as the bacon will take care of that.
8. Fill the cups with the veggie/meat mixture to just below the top of the bacon. Pour in egg mixture but only fill each cup about halfway, eggs have a tendency to expand.
9. Go back and top each one with a few leaves of baby spinach.
10.Place muffin tin into preheated oven for about 25 minutes. Keep an eye on it! It will sizzle and the bacon will begin to shrink down (good thing you didn’t over stuff these bad boys). At about 25 minutes remove the bacon cups from the muffin pan and transfer it to a foil lined baking sheet. If you plan on eating these right away you may do so now. I take these to work so I like the bacon to be a bit crisper to hold up better. Return the cups to the oven at 375 for 8-10 minutes, again keeping an eye on them.
11.Remove them and place them on a cookie cooling rack to let any additional grease drain off. Voila. Bacon Morning Glory cups! Yum!

omg, Alia. We just made these for breakfast and again I had to fight to keep up with Sean, lest they all be eaten!! They were sooooooo scrumptious!
I tried adding a bit of heavy cream to ‘quiche’ it up a bit and it seems to work! Oh, and good call on not overfilling…had to learn that the hard way!

How did everyone do yesterday? Did everyone meet/beat their personal expectations? How did you game the bar pullovers?

Awesome Ruth! Nice job 7th and 9th! Thanks for the props on my blog. I only did 100 burpees today . . I still owe 80 =(
