Dressing it Up

Summer brings warm weather and most of us craving light refreshing salads at chow time. However, one of the sneakiest offenders of the SAD diet lies in salad dressing. Talk about wolf in sheep’s clothing. Check out the ingredients on your store bought dressings to see if you’re inadvertently sabotaging your own efforts at health.
Often times store bought dressings have: vegetable/canola oils, sugar (in the form of HFCS, brown sugar, honey, molasses, etc), soybean oil, and countless other artificial bad stuff.
Mark’s Daily Apple posted these 10 delicious Do It Yourself dressings that can top a range of salads from your run of the mill side salad to waldorfs, caesars, and cobbs. These take a few minutes to mix and shake and can bring enough variety to your salads. Here’s one of my favorites from his list:
Citrus Vinaigrette

Ingredients:
1 tbsp white balsamic vinegar
1 tbsp fresh squeezed orange juice
1 tbsp fresh squeezed grapefruit juice
1 tbsp fresh lime juice
1 tbsp fresh lemon juice
6 tbsp olive oil
2 tbsp chopped walnuts
2 tbsp grated Romano or Parmesan cheese
Salt and pepper to taste
Method:
In a large mason jar or container with a tight lid, combine the vinegar, orange juice, grapefruit juice, lime juice, and lemon juice. Drizzle in the olive oil while whisking vigorously. Once mixed, add the walnuts and cheese and stir. Season with salt and pepper to taste
