Mark’s Daily Apple posted yesterday about how to make your own sausages.  For those of us doing the Whole 30 Challenge, it can be exhausting reading food labels of semi-prepared foods only to see sugar, cheese, etc on the list.  Making your own sausages ensures that you know exactly what you’re eating.  Jason T. already makes his own, and I’m sure some of you have tried as well.  Although most sites say you need to start with a meat grinder with a stuffing attachment, you can easily go to your local butcher and have your choice cut of meat ground for you.  Instead of stuffing into casing, you can start by shaping them into patties to make it less labor intensive!

Here are a few of his recipes, but take a look at the article for the entire process, from grinding to stuffing.

Fresh Herb Sausage

  • 2 pounds of raw meat, cut into 1-inch chunks (include all fat)
  • 2 teaspoons kosher salt
  • 1/4 cup finely chopped fresh herbs (try basil, cilantro or dill)
  • 2 garlic cloves, finely chopped
  • 1/2 teaspoon black pepper
  • 2 tablespoons red wine vinegar or red wine

Merguez Sausage

  • 2 pounds of boneless lamb shoulder, cut into 1-inch cubes (include all fat)
  • 2 teaspoons kosher salt
  • 3 garlic cloves, finely chopped
  • 1/2 cup finely chopped roasted red peppers
  • 3 teaspoons smoked paprika
  • 1 tablespoon finely chopped fresh sage
  • 1 teaspoon red pepper flakes
  • 2 tablespoons red wine vinegar or red wine

Someone needs to tell Ruth we live in South Bay! Flip flops and board shorts are part of my religion. You’re telling me I’ll never make the AVP or NBA if I wear flip flops? You’re telling me I have no shot at CF Champion if I wear flip flops? OK. Deal. Love you Ruth!! :)

Silly rabbit, I’m just passing on the info, which would be useful if you had calf, ankle, or foot problems. Am I running to the local salvation army with all my flip flops and chucking them? No, not quite yet, but I will try to wear them less often (especially near competition time).

Our goal is not necessarily make y’all AVP/NBA/MMA/etc stars (unless that’s your goal) but to have you squatting, deadlifting, and wodding with your grandchildren with nothing impairing or inhibiting you! ;)

Look at it this way, Scott, you now have an excuse to go buy another pair of shoes to add to the collection!

I made a batch of those herb sausages last night with basil and 6 pounds of fatty pork butt. Turned out pretty damn good.
