Rest Day Recipes: Coconut Chicken Nuggets

Last weekend at the Summer Shakedown, Nicole from Karma CrossFit, introduced the teams to a tasty little Paleo treat: Coconut Chicken Nuggets. These tender and moist nuggets were so good, I kept thinking about them even after the competition. They’re super easy to make and they don’t take long to cook at all. It’s also a great finger food for the upcoming football season!
Ingredients
1 pound ground chicken
1 egg yolk
1 teaspoon onion powder
¼ teaspoon garlic powder
¼ cup + ½ cup almond flour
½ cup unsweetened shredded coconut
½ cup coconut oil
Salt & Pepper
