This past week I took a stab at making a primal dessert that I saw on Mark’s Daily Apple. I am not a big fan of baking so it really takes something special to catch my eye to make. Frozen coconut macadamia bars are very simple to make and do not involve many ingredients. The process was so easy that I was in and out of the kitchen within less than one hour.

Ingredients:

1 cup unsweetened flaked coconut (60 g)

1 1/2 cups raw, unsalted macadamia nuts (150 to 160 g)

3/4 cup melted coconut oil (180 ml)

1 tablespoon chia seeds (15 ml)

Pinch of sea salt

Instructions:

Preheat oven to 350 ºF.

Put the coconut flakes in a pan and toast in the oven until lightly browned, about five minutes.

Line an 8×8 pan with parchment paper.

Process the macadamia nuts and coconut oil in a food processor until very smooth. Add the coconut flakes and chia seeds and pulse a few times.

Pour the batter into the 8×8 pan. Sprinkle a pinch of sea salt on top.

Time:

15 minutes in the oven and 30-40 minutes to freeze the bars

Mark’s Daily Apple says that keeping the bars frozen is the key to a successful treat because it is the cold texture that makes them delicious. I would definitely agree with that statement. The colder the better!

*I would like to send out a big congratulations to Nick and Holley for getting engaged last weekend. Also Ashley B. got engaged yesterday as well…to me! Congrats to all!!!
