Ingredients:

  • 2 packages of Trader Joe’s Frenched Cut Pork Chops (4 chops total, weighing ~2lbs. — you want 1” thick chops, not the thin ones)
  • 32oz bag of sauerkraut (don’t use canned)
  • 2 large apples (I used 4 smaller fuji apples from the farmer’s market)
  • 1/4 cup raisins
  • 1/4 cup chopped pecans
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon

Directions:

  1. Heat oven to 350F, grease a 13 x 9 dish with coconut oil
  2. Brown the pork chops on all sides, transfer to dish
  3. Core and coarsely chop the apples, place in medium bowl
  4. Drain sauerkraut, add to bowl along with raisins, pecans and spices
  5. Mix ingredients in bowl thoroughly, then place evenly over the pork chops in dish
  6. Cover dish with foil and place in oven to bake for 1 hour
  7. Remove and dig in!
