I’m always looking for ways to satisfy my pizza cravings without going off the deep end. It’s always tough to attempt “paleo baking” and most of the pizza crusts I have attempted in the past turned out soggy and fall apart pretty quickly.  Recently I found a recipe for cauliflower pizza crust on a Facebook site called Kickass Fitness. While I haven’t yet tried the recipe myself, this lady experiments with paleo/primal recipes all of the time, and so far her recipes have turned out pretty tasty. Here are the instructions:

Pre-heat oven to 400 F. Steam approximately 4 cups of cauliflower until soft. Mash and mix in 2 egg whites, 3 tbsp almond flour, and seasonings of your choice (ex: garlic powder, Italian seasoning, salt). Put mixture into a greased pizza pan and bake for about 15 minutes or until the crust is firm enough to add toppings. The baking time will vary based on what size pan you use to cook the crust. Then add your toppings to the pizza (maybe soon we should have Anna post her delicious pizza sauce recipe :) ) and bake for another 10 minutes or until the edges of the crust start browning.

Her tips were to bake the crust until it’s almost finished before adding toppings and possibly add more almond flour to make a crispier crust. Have fun experimenting!

I love how cauliflower can transform any dish into paleo! Mashed potatoes, rice, and now pizza!!! I’ll def try this one. And my sauce recipe is in the intrepid family cookbook.
