Wanting to do my part to avoid the bacon shortage* and also wanting to use the “fruit” from my garden, I found a recipe on FoodNetwork.com that would accomplish both.  The recipe was easy, required little prep time and transports well (travelled with me on my last 4 day work trip).  On an aesthetic note, it’s a nice presentation on a plate if you’re having company over.  My only recommendation is to try the recipe on a cooler day as you will need to utilize your oven to bake the chicken.

Ingredients

8pcs bacon, cooked half way

1 1/2 lbs boneless, skinless chicken breast, cut into halves

2 T extra virgin olive oil

1 clove fresh garlic, minced

2 T red onion, chopped

2 Roma tomatoes, sliced thick

1 bunch fresh thyme
