Primal Mole Sauce

With the cold weather, I always tend to crave comfort foods. Most of these comfort foods are outside the Circle of Paleo by a longshot, but I just found this recipe on Mark’s Daily Apple that I’m going to have to try. It’s main drawback is the 1/3 c of dark chocolate, but I’m going to play with the proportions of 80% and 100% cacao to see how much I can lower the sugars.

(Makes about 2 cups of sauce)

  • 6 dried ancho chiles
  • 2 dried pasilla chiles
  • 2 dried mulato chiles
  • 1/2 cup oil or lard
  • 2 garlic cloves, peeled
  • 2 tablespoons pumpkin seeds
  • 1/4 cup sesame seeds
  • 1/3 cup whole blanched almonds
  • 3 tablespoons raisins or dried, unsweetened blueberries
  • 3 whole cloves
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon Mexican cinnamon
  • 3 tomatillos, husked and roughly chopped
  • 3 cups chicken broth
  • 1/3 cup finely chopped dark chocolate (80% cocoa)
