The Whole 9 Life blog often posts delicious “Steal This Meal” recipes that have been “Whole 30 Approved.” I’ve tried their Thanksgiving recipes and they did not disappoint! Last December they posted this roasted squash and sausage recipe for people who don’t like to eat eggs for breakfast. Similar to the Irish bangers and mash, this meal can be made the night before and reheated the next day. (**Butternut squash is a dense carb, so keep the serving size reasonable. They also suggest a side of steamed spinach!)

Ingredients (serves 2):

  • 1 small butternut squash
  • 1 medium sweet onion
  • 6-10 links of sausage (pork, turkey, or chicken)
  • 1/4 cup coconut milk
  • 1/2 tablespoon of cinnamon
  • Tony Chachere’s seasoning to taste
  1. Pre-heat oven to 400 degrees.
  2. Cut sausage into cubes or slices. (Mike used a free range turkey sausage from a local farm that contains turkey breast and thigh meat, green onions and spices).
  3. Slice/dice onion.
  4. Split squash in half lengthwise, remove the seeds, and place upside down on roasting pan.
  5. Cook until soft (~ 30-45 minutes).
  6. Brown sausage and onions in a pot.
  7. Scoop squash out of shell and into the pot with the sausage. Stir, adding seasoning and coconut milk.
  • Serve hot, or refrigerate and re-heat the next day.
  • I made this last night using 2 bags of TJ’s butternut squash, 1/4 c coconut milk, 1# TJ’s Sweet Italian Sausage, and some creole seasoning.  It smelled delish and I’ll have a verdict for you a few hours after this posts!

    Strategery: 5 reps on the minute for 2 rounds, then just tried to hang on from there.
    - It gets heavy quick. missed 1 jerk, squatted mad deep, so it took a bit out of me. Good luck Intrepids!

    Michelle dominated Crossfit Oakland this morning. I was there too. :) We did 1×5 DL and then the WOD was 10-8-6-4-2 Snatch (95#/50#) alternating with 25-20-15-10-5 PSU. Michelle finished in 8:16 and I did 9:07.

    It’s fun to travel and see lots of CF gyms. It always makes us thankful that we belong to CFI. There are some nice gyms and really nice people, and some not so nice gyms, but none of them measure up to CFI.

    The trainer and people at CF Oakland were super nice and friendly. I would definitely recommend that anyone traveling in the Oakland/Berkeley area drop in for a workout. But they are rather unfriendly to CF newbies. We wanted to bring our friends from Berkeley to check it out, but they don’t let newbies try a workout before starting On-Ramp. They only let newbies watch. Really??? Boooo!!! I’m glad CFI let’s new people come in and give CF a try.

    I wont even describe the experience at the other CF gym up here because I know Ruth wouldn’t want comments on our blog ripping other boxes.

    But the point is…..Michelle and I feel even more thankful and appreciative for our awesome trainers and friends at CFI. Hope you guys have a great weekend. See y’all Monday!!
